Shrimp Scampi Risotto Recipe

  • 3 tbsp butter
  • 1 large bulb onion diced
  • 4 cloves garlic minced
  • 1 cup basmati rice
  • 1/2 tsp kosher salt
  • 4 cup chicken broth
  • 1 pound medium shrimps peeled and cleaned
  • 1 lemon juice
  • 2 tbsp chopped fresh parsley plus more for garnish
  • 1 tbsp red pepper flakes crushed
  • 1 cup parmesan freshly grated


  1. Place a large deep frying pan on medium heat and melt the butter.

  2. Cook the onion for 5 to 6 minutes until very light brown and soft.

  3. Add 1 garlic clove and stir, and cook for another 1 to 2 minutes.

  4. Add pre-cooked basmati rice and mix well and add salt to season.

  5. Mix the broth adding slowly and stir and make they are mixed well.

  6. In another large frying pan, add the remaining butter whilst adding the garlic and lemon juice.

  7. Add the parsley, and crushed red pepper flakes and stir for a few minutes.

  8. Add the shrimp to this pan and cook until pink and well done for 5 to 6 minutes.

  9. Let it simmer and add the earlier dish of prepared Parmesan to the risotto and stir well.

  10. Serve garnished with parsley hot to the table.
