Mothers Day Lunch Recipes 2017

Cheesy Lemon Angel Hair Pasta

A delicious “mother’s day lunch” pasta dish that would make your Mum proud of your culinary expertise and which would show the love you have for her, by your efforts to bring out such a wonderful dish.

  • 1 pound angel hair pasta
  • 1 tbsp olive oil extra-virgin
  • 2 tbsp unsalted butter
  • 2 tbsp flour
  • 3 pcs lemons thinly sliced and deseeded
  • 3 cloves garlic minced
  • 3/4 cup chicken broth
  • as per taste kosher salt
  • as per taste black pepper freshly ground
  • 1-1/2 cup parmesan grated
  • 1-1/2 cup gruyere grated
  • 1-1/2 cup pecorino romano grated
  • 1/4 cup chopped fresh parsley plus more for garnish


  1. Boil a large pot of water and drop sufficient quantity of salt to season it.

  2. Cook the pasta as directed and drain.

  3. Place on low heat a large frying pan and when hot pour 2 tablespoons of olive oil, and the 2 tablespoons of unsalted butter.

  4. When the butter melts, add the garlic and lemons.

  5. Add the salt and the pepper sufficiently and cook for about 2 to 3 minutes.

  6. Add the flour gradually while whisking.

  7. Then add the chicken broth and continue to whisk, until cooked and add the cheese whilst continuing to whisk.
  8. Add the cooked Angel hair and toss in the sauce and serve with garnished parsley, hot to the table.
