Cheesy Lemon Angel Hair Pasta

Ingredients

  • 1 pound angel hair pasta
  • 1 tbsp olive oil extra-virgin
  • 2 tbsp unsalted butter
  • 2 tbsp flour
  • 3 pcs lemons thinly sliced and deseeded
  • 3 cloves garlic minced
  • 3/4 cup chicken broth
  • as per taste kosher salt
  • as per taste black pepper freshly ground
  • 1-1/2 cup parmesan grated
  • 1-1/2 cup gruyere grated
  • 1-1/2 cup pecorino romano grated
  • 1/4 cup chopped fresh parsley plus more for garnish

Instructions

  1. Boil a large pot of water and drop sufficient quantity of salt to season it.

  2. Cook the pasta as directed and drain.

  3. Place on low heat a large frying pan and when hot pour 2 tablespoons of olive oil, and the 2 tablespoons of unsalted butter.

  4. When the butter melts, add the garlic and lemons.

  5. Add the salt and the pepper sufficiently and cook for about 2 to 3 minutes.

  6. Add the flour gradually while whisking.

  7. Then add the chicken broth and continue to whisk, until cooked and add the cheese whilst continuing to whisk.
  8. Add the cooked Angel hair and toss in the sauce and serve with garnished parsley, hot to the table.

Shrimp Scampi Risotto Recipe

Ingredients

  • 3 tbsp butter
  • 1 large bulb onion diced
  • 4 cloves garlic minced
  • 1 cup basmati rice
  • 1/2 tsp kosher salt
  • 4 cup chicken broth
  • 1 pound medium shrimps peeled and cleaned
  • 1 lemon juice
  • 2 tbsp chopped fresh parsley plus more for garnish
  • 1 tbsp red pepper flakes crushed
  • 1 cup parmesan freshly grated

Instructions

  1. Place a large deep frying pan on medium heat and melt the butter.

  2. Cook the onion for 5 to 6 minutes until very light brown and soft.

  3. Add 1 garlic clove and stir, and cook for another 1 to 2 minutes.

  4. Add pre-cooked basmati rice and mix well and add salt to season.

  5. Mix the broth adding slowly and stir and make they are mixed well.

  6. In another large frying pan, add the remaining butter whilst adding the garlic and lemon juice.

  7. Add the parsley, and crushed red pepper flakes and stir for a few minutes.

  8. Add the shrimp to this pan and cook until pink and well done for 5 to 6 minutes.

  9. Let it simmer and add the earlier dish of prepared Parmesan to the risotto and stir well.

  10. Serve garnished with parsley hot to the table.

A word about Mother’s Day:

The sudden death and subsequent funeral obsequies of Ann Reeves Jarvis in 1905, was although usual like others but her daughter Anna Jarvis took it upon herself to pay tribute to her loving mom and began commemorating her death and calling it “Mother’s Day”.

Her campaign to allocate a day as “Mother’s Days” took off just after that and it got countrywide recognition when she had the first prayer meeting at St. Andrew’s Methodist Church, Grafton, West Virginia in 1908.

Her relentless campaign did have some lighter moments when the bill went to the United States Congress and one member suggested that it would be appropriate, to allocate “Mother-in-law’s Day” as well and the bill was rejected.

The campaign did have the blessings of the people and sanity prevailed when President Woodrow Wilson signed the proclamation in 1914 declaring the “Second Sunday of May” as “Mother’s Day” which is now a day of celebration with all mothers joining in.

Today “Mother’s day” is celebrated in more than 40 countries worldwide and has commercialized the day and many items are sold to propagate the day as a day of Joy for mothers and family too.

The dates of celebrations would be different in different countries due to various reasons and also as it is not an internationally declared day hence the varying dates.

There is a very strong lobby which is trying to unify the dates and recognize it as one day of the year but that has still not come to pass and it will soon.

That is the hope of everyone who has been benefiting commercially from it and looking at it from that perspective it would be healthy for the world economy too, apart from whatever anyone might say.
